New Recipes

Rick and I are trying to eat healthier food. Last week I made some tostada thing that was pretty good. I forgot to take a photo. This week I made Linguine with Garlicky Breadcrumbs. Well I started with the recipe and tweeked it to fit what I had on hand, which included fresh basil. It was incredible! Even the next day...just don't mix the bread crumbs in until you are ready to eat. Mine was made with whole wheat thin spaghetti. I actually prefer whole wheat pasta. MMM this is making me hungry just thinking about it.

A Tastee Treat - Chewy Caramel Popcorn

I came across this recipe today and made it for the football party I attended. It was quick easy and mighty tasty.
CHEWY CARAMEL POPCORN BALLS
1/2 of 14 oz. pkg. vanilla caramels
1 tbsp. water
2 tsp. butter
7 c. popped popcorn
Combine caramels, water and butter in 4 cups liquid measuring cup. Microwave 1 1/2 minutes. Stir until smooth. Cook popcorn in microwave oven then pour melted caramel over popcorn; mix well. Then shape into balls.
I didn't make balls...just left it all in a big bowl and it worked out well.
Just remember, GO UTES!

Food? Yes Please

I like food. I like it a lot. I was able to lose 40+ pounds at one point in my life. I found most of them. I am keeping them safe now.
Rick and I have a deal, I cook, he cleans. I really like to cook. I enjoy finding new recipes. I enjoy checking out foodgawker.com That is where I found those awesome cinnamon rolls a few weeks ago. Today I found a mushroom pasta that I am now dieing to try.
I would love to hear your favorite recipes. That reminds me, Darci, I would like to get your Cafe Rio recipe...does anyone have their or Costa Vida's ranch dressing recipe? What about Costa Vida's chicken? (I think it is a billion times better than Cafe Rio.)
Here are my requirements though...
We do not eat ground beef and we rarely eat any red meat BUT we will eat ground turkey.
Rick cannot eat seafood. It used to only be shellfish but it is ALL fish now. He can't even walk near the seafood at the grocery store. He walks all the way around or once in a rare while will hold his breath and literally run past it.
Rick doesn't tomatoes = The Devil's Fruit. I love them therefore I am The Devil
Rick doesn't like really rich and creamy foods, I do (Have you seen my waist line compared to his lately? He has lost 50 pounds!)

What we do like...FRESH FRESH FRESH I wouldn't know how to cook a casserole if I had to. We do eat fresh veggies all the time. We both generally like pastas.

So you see the bind I am in? We are really picky in our own opposite ways and therefore I run out of ideas of what to cook. Anything you leave in the comments would be helpful. THANKS
